Easy Banana Blossom Vada!

(aka Bondi Dangar/Plantain flower patties)

Banana flower is both tasty and extremely healthy! It can help with keeping infections at bay, supports menstrual wellness, controls diabetes, reduces anxiety and much more!

Perfectly tempered and crispy patties which are a great accomplishment to your tea/coffee as well a crunchy side dish to simple rice and dal. A big shout out to Sreeja Shenoy for sharing her recipe. Rice1 cup
Toordal1/2 cup
Coconut1 cup
Channa dal2 tbsps
Peppercornsaround eight to ten
Bondi/core of banana flower1 medium size
Onion1
Crushed gingerhalf inch
Chilli powder1 and 1/2 teaspoon
a pinch of asafoetida
salt to taste

Prepping the banana blossom

1.Remove the top three to four tough layers of the blossom. With each layer, carefully peel the tiny white flowers and keep aside.

2. Once you come to the white core, chop it into small bits. Chopped the other tender layers which are reddish white too.

3. Soak these bits into a solution of salt water for 15 minutes or till further use. Rinse and drain completely before use.

Prepping tiny Banana flowers.

1. Remove the largest staman and plastic like filament from every flower.

2. Then chop finely n soak in salt water for ten minutes.

3.Drain and rinse thoroughly.

Method for vadas

1.Soak rice, channa dal and toordal together for 1 hour. Grind this with coconut without adding water.

2. Remove and mix chilli powder, chopped onion, ginger, asafoetida, salt to taste. Add chopped and drained banana blossom pieces and tiny flowers too. Mix well. Refrigerate for half an hour, if time permits. It not only helps to make the vadas crispy but also retain the crunch longer.

3. Make small patties and fry well on both sides till golden brown.

Recipe for banana flower side dish.

Heat oil. Add chopped garlic and one chopped onion. Add a pinch of turmeric and one tsp chili powder. add the chopped banana flowers along with salt to taste. Cook till dome. I didn’t add any water. You may add a few tsps if it gets too dry.
